LycoRed Boosts Health & Flavor with Natural Salt-Enhancement Ingredient

LycoRed, Israel, introduces LycoRed SANTE – a patented and natural tomato concentrate designed to successfully enhance taste and flavor, in place of artificial flavor components or flavor enhancers. SANTE can be used for salt taste enhancement and reduction of expensive, flavor components in food products.

For centuries chefs and food technologists have added tomatoes to a wide variety of foods to enhance and improve flavor profiles. LycoRed’s food scientists succeeded in separating out and concentrating all the taste enhancing components which exist naturally in the tomato, liberating a natural flavor enhancer suitable for a wide range of applications. In many cases, LycoRed SANTE can be used to enhance flavor and thereby reduce the amount of salt added to a product.

“The current ‘back to basics’ trend encourages food manufactures to minimize the number of ingredients, reduce sodium and avoid E-numbers in the European market, while making it as tasty as ever,” explains Ehud Zach, Food Applications Manager at LycoRed. “The good news is that, in some cases, you can save up to 10-20% of product cost just by replacing expensive ingredients, while at the same time reducing sodium and enable a clean label.”

“LycoRed is a pioneer in naturally sourced, specialty tomato products,” says Dr. Sam Bernhardt, Director of New Food Ingredients of LycoRed. “Our heritage is the knowledge of tomatoes, and our expertise is in developing novel ingredients that can help in creating exciting and healthy foods. After five years of intense research and development, we were able to create LycoRed SANTE as a healthy, natural solution for the industry with umami and kokumi flavor characteristics. LycoRed SANTE can be applied to a wide variety of food systems, such as culinary products, soups, sauces, baked products, snacks and protein-based formulations. By replacing artificial flavors and removing ingredients such as MSG and yeast extracts, we can offer food manufactures a superior choice for tasty, clean-label natural products. At the same time, SANTE can create cost-saving opportunities due to the reduction in traditional formulary ingredients,, spices, artificial flavors or tomato paste.”

LycoRed SANTE is available in liquid form or as a free-flowing powder and can result in improved flavor profiles versus expensive ingredients such as butter and cheese. It is heat resistant, stable at almost all pH’s and is suitable for ambient, frozen, baked, cooked and fried products. LycoRed SANTE can be mixed directly into dough or food mixes, applied as a seasoning, dusted on or even applied with a brush.

“LycoRed SANTE is designed to successfully enhance flavor, replace artificial flavor components and, in some cases, reduce costs in products as diverse as chili con carne, fruit juices and even ice cream, allowing a clean label designation,” explains Bernhardt.
