Functional blends simplify Greek-style yoghurt processing Greek-style yoghurt has become very popular. In this exponentially growing category, consumers prefer high-quality products with authentic texture and taste. SATRO’s functional blend solutions from the ACILAC® js range offer high gel strength and exceptional water binding properties in Greek-style yoghurt applications. Based on a combination of highly functional milk proteins with hydrocolloids, starches or gelatine, ACILAC® js blend solutions are efficient texture builders, even at a small dosage. The blend gives improved viscosity and a creamy mouthfeel and appearance. On request, SATRO offers functional blend systems for Greek yoghurt which are suitable for vegetarians or halal- and kosher-approved. Great opportunities with direct quark concepts on yoghurt lines The SATRO ACILAC® ms range enables the dairy industry to produce curd-like products (direct quark) conveniently and cost-effectively on regular yoghurt processing lines. New product concepts can easily be implemented without any investments – without separation and with no remaining whey. The variations of direct quark range from aerated to non-aerated and from savoury to sweet. Fruit preparations can be added as a topping, layered on the bottom or mixed homogeneously through the product. The advantages of using ACILAC® ms blend solutions are impressive. Even at a small dosage, ACILAC® ms effectively supports the structure of the product while having a neutral flavour. This functional blend gives direct quark a full-bodied texture and improved viscosity. Its excellent water-binding and gelling properties prevent the curd-like product from syneresis.
